Скажите, пожалуйста, возможно использовать переменные для указания имени колонок?

CLEAR ls_fieldcat.
ls_fieldcat-col_pos = 3.
ls_fieldcat-reptext_ddic = l_waers. " переменная для имени заголовка
ls_fieldcat-tabname = 'ITAB'.
ls_fieldcat-fieldname = 'WAERS'.
ls_fieldcat-datatype = 'CURR'.
ls_fieldcat-outputlen = 5.
APPEND ls_fieldcat TO lt_fieldcat.

Если переменная l_waers будет содержать значение "Код валюты" - то все будет работать. Smile
Для изменения заголовка лучше использовать такие поля каталога полей, как COLTEXT и SELTEXT_M.
