Надо записать в переменную дату в виде '12_02_2009', чтобы разделителем было нижнее подчеркивание. Это возможно через EDIT MASK?

Через тире понятно как, а чем заменить нижнее подчеркивание?

   DATA: l_date(10).
  WRITE sy-datum TO l_date USING EDIT MASK '__-__-____'.

Тогда уж лучше так:
TRANSLATE l_date USING '-_'.
